Ingredients:
2 lbs yams (or butternut squash)
1/4 C butter (or up to 1/2 C)
1 small chopped onion
salt and pepper to taste
sprinkle of brown sugar
sprinkle of parsley
Instructions:
*Boil unpeeled yams for 15 minutes in salted water, drain, peel, slice or dice.
*Melt butter in skillet and add yams and onion and saute until browned
*Season with salt and pepper to taste, add brown sugar and parsley.
*Bake at 350 for 40-50 minutes.
