YAMS

This is my easy version of Yams for the holidays.

Ingredients:
2 lbs Yams (or butternut squash)
1/4 C melted butter (use more if its your liking)
1/2 small onion, chopped
salt and pepper to taste
brown sugar, sprinkle as much as you like
parsley

Instructions:
- Boil unpeeled yams for 15 minutes in salted water.
- Drain, peel, slice or dice yams.
- Place yams and onions in a casserole dish.
- Pour melted butter of the top.  Do not stir.
- Sprinkle with salt, pepper, brown sugar and parsley.

Cooking:
- Cook at 400* for about 30 minutes.
